Grilled Portobello Mushrooms

I love almost all thing mushroom, and grilled portobello mushrooms is right up my alley. It's a quick side for a backyard BBQ. Adding the parmesan make a perfect flavor combination.

The sesame seeds on the photo, is an accidental 'cross contamination' from the chicken on the grill.

Ingredients:

  • 2 portobello mushrooms
  • ½ cup (1 dl) freshly grated parmesan
  • about ¼ stick (ca 30 g) butter, salted and soft
  • a splash of olive oil, for brushing the top of the mushrooms 
  • A sprinkle of chopped parsley

Directions:

Preheat the grill.

Clean the portobello mushrooms with a damp paper towel and remove the stems. Brush the caps with olive oil and set aside gills side up.

Mix butter and parmesan, and divide it evenly over the mushroom caps. Grill over hot grill for about 10 minutes. You want the mushrooms to be soft, but not mushy.  Let the mushrooms rest for a few minutes, to soak up the butter.

Lemon Marinated Skirt Steak

I love grilling skirt steak. You can marinate the meat to make it fit the cuisine you are aiming for. The beef flavors are pretty intense and the it is not as pricy as regular steaks. Here I marinated the skirt steak in a soy-lemon marinate, giving the meat a clean bright flavor. 

Serves 3-4.

Ingredients:

  • 700 g (1 ½  pounds) skirt steak
  • coarse salt and freshly ground pepper
  • 1 lemon, for serving
  • fresh coriander, for serving

Marinade:

  • 60 ml (¼  cup) extra-virgin olive oil
  • 60 ml (¼  cup) soy sauce 
  • 2 lemons, the juice from 
  • 2 tablespoons brown sugar
  • 2 cloves garlic, smashed

Directions:

Place the skirt steak in a ziplock bag, and add the ingredients for the marinade. Rub the marinade into the meat. Let the meat marinate for at least 1 hour at room temperature, or up to 6 hours in refrigerator.

Heat grill to medium-high. Remove meat from marinade and pat off excess juices with some paper towel. Grill the meat, just turning once, until  medium/medium rare about 5 minutes on each side. Transfer the meat to a cutting board, cover with some aluminum foil and let stand to rest for about 5 minutes.

Thinly slice meat against the grain (muscle fibers) and serve it with some cilantro on top, and lemon slices on the side. I served the warm Asian-style slaw on the side, but you can easily serve the meat in tacos.

Oysters Rockefeller

It took me 40 years to build up the nerve to try to eat an oyster. After the first bite, I was hooked. We just went back to Hog Island Oyster Farm, for yet another oyster fix. I love the down to earth feeling, when sitting at wooden picnic tables eating the scrumptious grilled oysters, while enjoying the beautiful Tomales Bay and the hills of Point Reyes. 

Like last time we brought some oysters back home, so we could try to make our own Oyster Rockefeller. 

Next time I might use less breadcrumbs and a little more cheese. But over all the oysters was so so good, I love Pernod's, anise taste.

This is my version inspired by Florence Tyler's recipe.

1 dozen (12 oysters)

Ingredients:

  • 3 tablespoons butter

  • 1 garlic cloves, minced

  • ca 20 g (¼ cup) bread crumbs, I used Panko

  • 1 shallots, chopped

  • 225-250 g (1 cup) chopped fresh spinach

  • 30 ml (1 fl oz) Pernod or dry white wine

  • Salt and pepper, to taste

  • 1 tablespoons olive oil

  • 25 g (¼ cup) grated gruyere cheese

  • 1 tablespoon chopped parsley

  • 1 dozen oysters, on the half shell

  • Rock salt

  • Lemon wedges & hot sauce, for garnish

Directions:

Melt butter in a skillet over low heat. Infuse the butter with garlic by letting the garlic sauté in the butter for about 1 minute, remove from heat. Don’t let the garlic brown, and burn, his will make the garlic bitter. Place the bread crumbs in a bowl and mix in half of the garlic butter, olive oil, gruyere, parsley and season with salt and pepper, set aside. 

Add shallots and spinach to the remaining garlic butter. Cook until the spinach wilts and the shallots get translucent. Deglaze the pan with Pernod. Let the mixture cook down for a few minutes then season with salt and pepper. Remove from heat, at let sit to cool.

Preheat the oven to 450 ℉ (230℃). Sprinkle a baking pan with a good amount of salt. Arrange the shucked oysters in the salt to steady them. Spoon a heaping teaspoon of the spinach mixture on each oyster followed by a spoonful of the bread crumb mixture.  Bake oysters for about 10-15 minutes until golden. Serve with lemon wedges and hot sauce.

I grilled my Oyster on the BBQ at about 450℉ for 10-15 minutes.

Grilled Sesame Chicken

Grilled Sesame Chicken

Chicken is one of my favorite things to throw on the grill. For the longest time I have been making beer can chicken, but for an easy weeknight dinner for two persons, I'll always end up with leftovers. Not that leftovers is a bad thing, It makes for an easy dinner the next day. 

I think I have had a chicken leg overload during the time I was single and studying. The chicken legs was a cheap meal and easy meal to make. One thing is sure, I haven't been roasting or grilling for years. This was not fair to my husband, he loves the dark meat from chicken.

This recipe for grilled sesame chicken, taught me to love chicken leg dinners again. The spice mixture and the crispy chicken skin is so so good. 

Serves 2.

Ingredients:

  • 1 tablespoon dried oregano
  • 1 tablespoon minced fresh thyme leaves
  • 1 tablespoon minced fresh rosemary
  • 2 tablespoons sesame seeds
  • 1 teaspoon salt
  • 1 lime, the zest 
  • 1 tablespoons extra-virgin olive oil, plus more for serving
  • 3 medium cloves garlic, minced 
  • 2 whole chicken legs 

Directions:

Combine oregano, thyme, rosemary, sesame seeds, lime zest and salt in a small bowl. In a Mortar and pestle combine  the spices with olive oil and garlic until it forms a paste.

Pat chicken dry with paper towels. Using your hands, rub the herb paste evenly all over the surface of chicken, working it into every nook and cranny.

Preheat the grill for about 10 minutes. Grill the chicken skin-side up at indirect heat for about 25-30 minutes. Then turn up the heat or move over direct heat and grill for another 5-10 minutes, until well done. Chicken should be cooked well done to 165-170℉ or 75℃.
Transfer chicken to a cutting board and allow to rest for 5 to 10 minutes before serving.

You need 2 of everything

  • 2 tongs, one for raw meats, another for cooked meat
  • 2 plates, one for raw meats, another for cooked meat
  • 2 marinades, one bowl for marinading and another for basting
  • use separate cutting boards for raw vegetables, raw meat and cooked meat and vegetables
  • don't leave food out, keep your food cold.

Crunchy Quinoa Slaw with Almond & Ginger Dressing

Summertime is grilling season, and I love grilling. I'm always on the look out for new sides to serve with grilled meats. 

Colorful, healthy and crunchy, and definitely a new go-to side for the summer BBQ's. And a perfect addition for our 4th of July.

Serves 4 

Ingredients:

Quinoa:

  • 180 g (1 cup) uncooked quinoa 

  • 4 dl (1½ cups) water

  • salt (to taste)

Salad:

  • ½ small green cabbage, thinly sliced

  • ½ small red cabbage, thinly sliced

  • 10-15 small scallions, finely chopped

  • 1 handful chopped fresh cilantro

  • 1 jalapeño, minced (optional)

  • 70 g (½ cup) almonds, chopped 

  • salt to taste

Dressing: 

  • 100 g (⅓ cup) almond butter (I use the fresh grinded almond butter from Whole Foods)

  • 50 ml (¼ cup) extra virgin olive oil

  • 3 garlic cloves

  • about 2-inch (6 cm) fresh ginger, peeled

  • 2 limes,  the juice from

  • 2 tablespoons water, to get the right texture

  • 1 tablespoon agave syrup

  • salt to taste

Directions:

Quinoa:

Rinse the quinoa. Bring quinoa and the water to a boil in a medium saucepan over high heat. Reduce heat to medium-low, cover, and simmer until quinoa is tender, about 10 minutes. Remove from heat and add salt to taste. Let the quinoa stand, covered, for 5 minutes. If any more water remains, drain it. Let the quinoa cool.

Dressing:

Add all the ingredients to a food processor and blend it until smooth. Add water if needed to get the right creamy consistency.

Mix all the ingredients and dressing to a large bowl and dress the slaw. Season with salt to taste. Serve this slaw with you favorite grilled protein or vegetables.
